Nettles are washed in several waters and cleaned of impurities: straw, popcorn and other herbs;)

Peel a squash, grate it and squeeze the juice. 10 minutes, over low heat, covered. Meanwhile, wash the mushrooms and carrots, then finely chop. After the onion has become translucent, add the mushrooms, carrots and rice, fill with water and cook over medium-high heat.

After the rice is cooked, add the finely chopped nettles, add more water, if necessary, leave to boil for approx. 5 minutes on medium heat, uncovered, stirring so that the rice does not stick. Then season with salt, pepper and greens. The pilaf is served as such, hot and cold, along with a seasonal salad.
