McDonald's Special Sauce (Big Mac Sauce)

A big part of the Big Mac's appeal is the tasty "secret" spread slathered onto both decks of the world's most popular double-decker hamburger. So what's so special about this sauce? It's basically just thousand island dressing, right? Pretty much. But this sauce has a bit more sweet pickle relish in it than a typical thousand island salad slather. Also, I found that this clone comes close to the original with the inclusion of French dressing. It's an important ingredient—ketchup just won't do it. That, along with a sweet-and-sour flavor combo from vinegar and sugar, makes this sauce go well on any of your home burger creations, whether they're Big Mac clones or not.

  • 1/2 cup mayonnaise
  • 2 tablespoons French dressing (I use Kraft)
  • 4 teaspoons sweet pickle relish
  • 1 tablespoon finely minced white onion
  • 1 teaspoon white vinegar
  • 1 teaspoon granulated sugar

1. Combine all of the ingredients in a small bowl. Stir well.

2. Place the sauce in a covered container and refrigerate for several hours, or overnight, so that the flavors blend. Stir the sauce a couple of times as it chills.

When I was 15, I talked my way into a job at a little mom and pop ice cream and fast food shack called The Penguin. It was one of those places where you stop when you’re driving through a small town on a long road trip, flashing frostie sign luring you in. It was also a place that was very popular with the locals.

The malts, dipped cones, and finger-sized French fries were among the favorite menu items. Even the Penguin tacos were a big hit! But the burgers were what kept people coming back.

The Penguin Burger was by far the best burger the town of Carson City, Nevada has ever seen. I grilled up my share of Penguin Burgers working there as a young high school student, and I topped them all with a secret, special sauce that made them so delicious. The sauce was so good that people often asked for a side of the sauce to dip their French fries in it!

  • 1 (6 ounce) can tomato paste
  • 6 fluid ounces warm water (110 degrees F/45 degrees C)
  • 3 tablespoons grated Parmesan cheese
  • 1 teaspoon minced garlic
  • 2 tablespoons honey
  • 1 teaspoon anchovy paste (Optional)
  • ¾ teaspoon onion powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried marjoram
  • ¼ teaspoon dried basil
  • ¼ teaspoon ground black pepper
  • ⅛ teaspoon cayenne pepper
  • ⅛ teaspoon dried red pepper flakes
  • salt to taste

In a small bowl, combine tomato paste, water, Parmesan cheese, garlic, honey, anchovy paste, onion powder, oregano, marjoram, basil, ground black pepper, cayenne pepper, red pepper flakes and salt mix together, breaking up any clumps of cheese.

Sauce should sit for 30 minutes to blend flavors spread over pizza dough and prepare pizza as desired.

In-N-Out Burger's secret sauce

A California hallmark, In-N-Out adorned their burgers with something simply called "spread" for over six decades. The "spread" recipe remained a So-Cal mystery until August 2015, when the recipe was revealed to the world. The formula long thought to be a variation of Thousand Island dressing turned out to be just that. It's just a combination of ketchup, mayonnaise, and relish, with some other ingredients thrown in. At least In-N-Out avoided embarrassment by giving their "spread" a fancy name. That was a close one.

Here's How To Make Your Own "Super Secret" McDonald's Big Mac Sauce

Recently, McDonald's made its famous Special Sauce available for purchase by the bottle. But before you get your hopes up Big Mac fans, there's a catch: The bottles were only sold in Australia, and there were only 4,000 bottles available, for a limited time. And that "limited time" turned out to be 15 minutes, because that's how long it took them to sell out.

Of course, it didn't take long for the "secret sauce" to end up on auction sites like eBay, with prices surging upwards of $100. (This is actually the second time McDonald's has sold a limited run of Big Mac sauce in Australia in 2014, the company auctioned off limited-edition bottles on eBay, with bids starting at $18,000, to benefit Ronald McDonald Charities.) But as delicious as the sauce may be, spending that kind of money on condiments isn't really in our budgets&mdashespecially since the sauce isn't really a "secret."

Since we're willing to bet you don't have 'Xanthan Gum' or 'Sodium Benzoate' in your pantry, there are much easier (and slightly healthier) ways to replicate the recipe. (Thanks, YouTube!) In 2012, McDonald's Canada actually posted a demo of how to make its Big Mac sauce:

My Swiss Army knife of Stir Fry Sauces!

Restaurant Secret: you know when you go to a packed Asian restaurant or take out during lunch hour and you’re handed a plate of fresh-out-of-the-wok stir fry 5 minutes after ordering? I hate to disappoint you, but the cooks standing over the flames aren’t throwing together 10 ingredient sauce mixes for every single dish…….What they actually use are ready made sauces as a base, then add additional flavours for different dishes.

These all purpose stir fry sauces are closely guarded secrets of restaurants – you won’t uncover them simply by googling, that’s for sure! Today I’m sharing mine. I call him Charlie (as in Charlie Brown….as in “Brown Sauce”, which stir fry sauces are commonly referred to as). Perfected and tweaked over years, I’ve been loyal to Charlie for a decade (and counting).

The brilliant thing about Charlie is that you make him just by combining the ingredients in a jar, them just store him in the fridge where he’ll happily reside for weeks – months even. Then you simply heat some oil in a wok, throw in whatever proteins, vegetables and noodles you want, then throw Charlie in with some water and he’ll magically transform into a thick, glossy sauce that lusciously coats your stir fry. He’s great plain, but so versatile too – add heat, herbs, fruity sweetness or some tang. I’ve provided some of my favourite variations in the recipe below.
