THE potato muffins they are a great idea for a different appetizer than usual. The peculiarity of these muffins, actually lies in the dough, to which I added some raw blended potato (along the lines of Nino's focaccia), which made them very soft and moist at the right point. In this case I added bacon and basil to the dough, but of course you can also take advantage of only the basic idea and stuff them as you like: asiago and emmental, mixed aromatic herbs, chopped vegetables ... the choice is yours, but then let me know how they came;)
How to make potato muffins
First of all, peel the potato, cut it into chunks and blend it finely.
Combine the dry ingredients (flour, yeast, salt, pepper, parmesan) in a bowl and mix.
Combine the liquid ingredients (milk, oil, egg) in another bowl and beat them together.
Then mix the liquid ingredients into the dry ones and mix well.
At the end also add the potatoes, bacon and chopped basil and mix to distribute them evenly.
Divide the mixture into muffin cups, filling them 2/3 of their height, then bake at 180 ° C and bake for about 15-20 minutes in a pre-heated ventilated oven.
The potato muffins are ready, at least allow them to cool slightly (if you can) before enjoying them.
