THE croissants with mascarpone they are a real delight, so they seem like the best way to start this new week with the right charge! And since today my 8th week of home isolation begins, what better way to get rid of the bad thoughts than by rewarding ourselves with fragrant croissants just out of the mold, soft, fragrant and sweet at the right point?
The recipe for these croissants was born from the need to take out a half pack of mascarpone, which I had left over from the preparation of the tiramisu that I made live a few Sundays ago, and the result was more than satisfactory: D
You can stuff these delicious brioches with homemade jam or Nutella, or enjoy them as it is, natural. In short, today I give you a good morning like this, hoping that the sweetness of a croissant with mascarpone can get you off on the right foot;)
How to make mascarpone croissants
First put the flour and sugar in a bowl, add the yeast dissolved in the milk just warmed in the center and start working, then add the yolk, vanilla and mascarpone and mix for a long time, for at least 15-20 minutes.
Move the dough onto the lightly floured work surface and continue to knead until you get a smooth and homogeneous dough (it may take another 10-15 minutes).
Let it rise, covered, for at least 2-3 hours or until it has doubled in volume.
Take the dough, deflate it with your hands and roll it out into a fairly thin round sheet.
Sprinkle with sugar, then cut into 8 wedges.
Take 1 clove at a time, make a small cut on the base, then start rolling the dough on itself, starting from the base, wrapping up to the tip.
Give the croissant the classic crescent shape and place it on the baking sheet lined with parchment paper, then proceed with the others.
Arrange the croissants on the pan well spaced apart and let them grow for another hour, then brush them with milk and sprinkle with sugar grains.
Bake for about 20 minutes or until golden brown in a preheated static oven at 180 ° C.
