Crush the butter in the flour with your fingers, then add the rest of the ingredients, sugar, yolks, sour cream, baking powder, peel and orange juice. Knead a soft dough that you divide into two balls. Don't be afraid if the dough is softer, it will harden in the fridge. The dough is kept cold for at least an hour. If the dough seems too soft, add more flour to the work table when you shape it.

Peeled apples are given through a large grater, mixed with sugar and cinnamon and then fried in a little butter and let the juice drop.

Grease the pan with a little fat and line it with flour. Remove the first dough, sprinkle the flour on the work table, place the dough and sprinkle the flour over it to make it easier to work. Spread the dough and then wrap it on the pan and unfold over the tray. Spread lightly with your hands all over and cut off the excess dough from the edges. Holes are made in the dough with a fork. Place the cooled filling. Spread the second ball of dough and place it on top of the filling. Press the dough on the edges to become tight. Make holes in the dough again and grease it with egg yolk. Bake until nicely browned.

Cut cold and powder with powdered sugar mixed with vanilla sugar.
